Ingredients

1 T butter
cooking spray
8 chicken or turkey breakfast sausage links, casings removed
1/4 cup flour
1/4 tsp sage
1/4 tsp marjoram
1/4 tsp thyme
1/2 tsp black pepper
1/2 tsp salt
2 cups 1% or skim milk
Directions
Spray a nonstick skillet with cooking spray and melt butter over medium-high heat. When butter begins to brown, add sausage (casings removed and discarded) and brown meat until cooked thoroughly. Remove sausage from skillet and drain, reserving a tablespoon of the liquid.
In a small bowl, combine remaining dry ingredients (flour through salt).
Return reserved sausage fat to the skillet , add one teaspoon of flour mixture to the pan and brown for one minute.
Whisk milk into remaining flour mixture until smooth and stir into skillet. Stir constantly, scraping the browned bits on the bottom of the pan and cook to a boil over medium high heat. Reduce heat to medium low and cook an additional 2-4 minute, stirring constantly, until mixture has desired thickness.
Serve over home-made or canned biscuits.
