Number of Servings: 8

Ingredients

    1 lb. Eye of Round Steak cut in cubes
    2oz Dry Red Wine
    2T Extra Virgin Olive Oil
    2c Beef Stock
    1c Water
    3 lg. Russet Potates cut in cubes
    1 lg Onion sliced
    3 clvs Garlic minced
    15 med Baby Carrots
    10 oz pkg Frozen Corn
    10 oz pkg Frozen Peas

Directions

1. Turn Crockpot on high. Combine Beef Stock, Water, Potatoes, Carrots, Onion, and Garlic and put on the lid.
2. Trim meat of all fat. Heat Extra Virgin Olive OIl in skillet over med-high heat. Brown Steak on all sides (about 5 mins).
3. Add Red Wine to skillet, scraping bottom of the skillet. Bring to a boil, and turn down to simmer for 2 mins.
4. Add Meat and Wine mixture to Crockpot.
5. In the last 45 mins pour both Peas and Corn into crockpot.

Makes 8 servings.
