Introduction

These yummy scones are made with Fiber One Pancake mix. If you're up for it, you can drizzle icing over the top! These yummy scones are made with Fiber One Pancake mix. If you're up for it, you can drizzle icing over the top!

Ingredients

    Ingredients:

    Fiber One Complete Pancake Mix (Dry), 1.5 cup
    Granulated Sugar, .25 cup
    Kroger Semi-Sweet Chocolate Chips, 4 tbsp
    Milk, nonfat, .25 cup
    3 Egg whites

    Icing Ingredients:

    Powdered Sugar, .5 cup, unsifted
    Vanilla Extract, .5 tsp
    Milk, nonfat, 2 tbsp

Directions

Preheat oven to 400F.

Mix dry ingredients including the chocolate chips. In a mixing cup, combine the milk and egg whites and whisk together. Then add to dry mix and gently fold in. Don't over mix!

Drip by large spoonfuls on cookie sheet and shape into triangle. Cook for 10 minutes.

Mix the last 3 ingredients into an icing and drizzle over the top of the warm scones.

This recipe will yield 8 good size scones.

We enjoy these with a nice cup of tea or a latte!!!

    Yes. The "serving" = 1 egg white. I updated the recipe to read 3 egg whites. Enjoy!
