Introduction

Great side dish and easier than a boxed Spanish rice. Most of the oil could be taken out and I'm going to on my next go round. Have not tried it with brown rice, but would probably be good. Ingredients

    2 Tbsp. Olive Oil
    1/2 c. Onions, raw
    1 clove minced Garlic
    2 c. White Rice, long grain
    3 c. Chicken Broth
    1 Tbsp. Tomato Paste
    1 tsp. Oregano, ground

Directions

Heat oil in skillet and add rice, onions and garlice. Saute until onions are tender. In another pan combine broth, oregan and tomato paste and simmer. Add rice mixture to broth. Once boiling point is reached, turn to low. Cover and simmer for 20 min. or until rice is done. Cooking times may vary depending on rice. Use cooking time on rice chosen.
