Introduction

This is a quick & easy main dish. One of my favorite recipes from my mom's cookbook. This is a quick & easy main dish. One of my favorite recipes from my mom's cookbook.
Number of Servings: 4

Ingredients

    1 cup Minute Rice, uncooked
    6 oz. water-packed tuna, drained
    .25 cup onion, chopped
    .5 teaspoon salt
    1 can condensed tomato soup
    1.5 cup water
    1 teaspoon sugar
    2 eggs

Directions

In a large bowl, combine rice, tuna, onion, salt & eggs. Blend soup, water & sugar in a large skillet; mix 2 tablespoons of the soup into the tuna mixture. Shape tuna/rice mixture into 1-inch balls.

Bring soup to a boil; add rice balls. Reduce heat; cover and simmer 15 minutes, basting occasionally. Makes 4 servings.
