Introduction

This salsa is very simple to prepare but rich with flavor. It is fantastic with fish but it can be used on chicken, tacos, salad, or even plain.

Note: One of the key ingredients is the chipotle paste...You will need to buy a can of chipotle peppers in adobo sauce and puree them in a blender or food processor. Stored in a glass container, the paste keeps for weeks and it goes great in just about anything! Add it to sandwiches or tuna for an extra kick, or in sauces and marinades.

Ingredients

    Approx. 1/2 cup mango, cubed
    Approx. 1/2 cup tomato, cubed
    1 tbsp. cilantro
    Juice from 1/2 lemon
    Approx. 1/2 tsp. chipotle paste (see note)

Directions

Cube the tomato and mango. Add the chopped cilantro, lemon juice, and chipotle paste. Stir to coat evenly.
