Introduction

Ingredients

    2 cups all purpose flour
    2/3 cup splenda
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 cup blueberries
    1 tbsp grated lemon rind
    3/4 cup skim milk
    3 tbsp melted light butter
    3 tbsp fresh lemon juice
    1/4 cup off egg beaters
    1/2 powdered sugar

Directions

1)Combine the first 5 ingredients in a medium bowl, blend well. Next add the blueberries (fresh or frozen) and 2 tsp of the lemon rind. Make a well in the center for the wet ingredients

2) In a seperate bowl combine the milk, butter, 1 tsp of the lemon juice and the egg beaters; stir well. Add to the flour mix stiring gently

3) Spray muffin tins with cooking spray, spoon batter equally into 11 muffin cups. Bake at 400 degrees for 17-20 minutes until golden brown. remove and cool.

Glaze = add the powder sugar, and 1 tsp of lemon rind to 2 tsp of of len juice . Stir till smooth
