Introduction

This is easy and tasty. I like to add extra veggies to the mix and like to use colored peppers rather than green. This is easy and tasty. I like to add extra veggies to the mix and like to use colored peppers rather than green.

Ingredients

    1 lb. lean ground beef
    6 peppers (red, yellow, orange are fun)
    1 egg
    3 tablespoons taco seasoning
    2 cups salsa
    2 cups brown rice

Directions

Mix ground beef, egg, taco seasoning and salsa together. Partially cook the brown rice for about 20 minutes following package directions. Add rice to the mixture. stuff the mixture into the peppers and bake at 350 for 45-60 minutes.
