Ingredients

1 Betty Crocker Super Moist Yellow Cake Mix
3 egg whites
1/3 Cup Unsweetened Apple sauce
1 small can mandarin oranges in juice (do NOT drain!)
"frosting"
8 oz Tub of Cool whip Free
1 small package dry Sugar Free/Fat free instant pudding mix
1 small can Crushed Pineapple in own juice ( do NOT drain)
Directions
Preheat oven to 350 Bake 20-30 minutes
Spray 13x9 in pan with non-stick spray
Makes 18 "good size" pieces of cake at 165.3 calories and 2.9 g fat per slice!!
In bowl, mix cake mix, egg white, apple sauce, and mandarins with juice till moistened. Then mix on high for 2 minutes till fluffy.
Pour into prepared pan. Bake till toothpick comes back clean. Completely cool cake!
In a bowl--mix with a spoon NOT a mixer-- Cool whip, pineapple with juice. Then sprinkle in dry pudding mix and stir. Do NOT over mix. Spread on top of cake.
Keep refrigerated.
