Ingredients

* 1 tablespoon butter
* 1 onion, chopped
* 2 garlic cloves, crushed
* 3 boneless skinless chicken breasts
* 1 teaspoon ground ginger
* 1 teaspoon chili powder
* 1 teaspoon turmeric
* 1 teaspoon cinnamon
* 1 teaspoon salt
* 1 can evaporated skim milk
* 1 6 oz can tomato paste
* 1/4 cup fat free sour cream or plain fat-free yogurt
* 1 teaspoon garam masala
Directions
SERVES 4
1. In a large saucepan, saute onion and garlic in butter, until onions are soft.
2. chop chicken breasts into bite sized pieces.
3. Combine spices (except garam masala) and toss chicken pieces until well coated.
4. Add the chicken to the onions and saute until the chicken is lightly browned on all sides.
5. In a separate bowl or large measuring cup, combine the evaporated skim milk, tomato paste, fat-free yogurt and garam masala with a whisk, then pour over chicken mixture.
6. Bring to a boil, reduce heat, cover and simmer for about 15 minutes, making sure that chicken is cooked through.
7. Serve over basmati rice and garnish with cilantro if desired.
8. Serve with a green salad or cucumber salad if desired.
