If you like cilantro, you will LOVE this salad!
My husband, who is a chef, makes it for me. It's a flavorful, low calorie salad that is very refreshing! It has a high water content so it's very good on hot days.

Ingredients

    2 cups watermelon, cut into small cubes
    2 cups peeled cucumber, cut into small cubes
    1/2 cup fresh cilantro, chopped fine
    2 Tbsp lemon juice
    1/2 tsp chili powder
    1/2 tsp paprika
    1/4 tsp cayenne pepper
    1/4 tsp sea salt
    1/4 tsp ground black pepper

Directions

makes 2 2-cup 15 carb servings

1. Chop watermelon and cucumber into bite sized cubes and add to bowl
2. Finely chop 1/4-1/2 cup of fresh cilantro and add to bowl
3. Add lemon juice, chili powder, paprika, cayenne, salt & pepper and mix well.

Serve immediately.

    Sounds great. I worked with many South Asian people and they made salads similar to this. Will try it on the weekend. Sounds great and lo cal, spicy and fresh. - 5/8/09
