Ingredients

    2 cups cooked, skinless light meat turkey or chicken, sliced shredded or chopped
    1medium apple, cored and diced
    1 cup seedless grapes, sliced in half
    2 medium stalks celery, chopped
    1 1/2 tbsp raspberry vinegar
    2tsp olive oil
    1/2 tsp ground coriander
    1/4 tsp table salt
    1/4 tsp ground black pepper
    4 cups shredded romaine lettuce
    In a large bowl toss together turkey or chicken, apple, grapes and celery.
    In a small bowl, whisk together vinegar, oil, coriander, salt and pepper. Add dressing to turkey or chicken mixture and toss again to combine. Arrange lettuce on 4 individual plates an top with turkey salad. Yields about 1 1/4 cups of turkey salad and 1 cup of lettuce per serving.
