Introduction

Number of Servings: 4

Ingredients

    2 small stalks celery, chopped
    1 small onion, chopped
    3 cloves garlic, minced
    2 teaspoons parsley flakes
    1 teaspoon italian seasoning
    1/4 teaspoon crushed red pepper
    2 cups low sodium chicken broth
    2 cups canned tomatoes
    1 pound can white beans with liquid
    1/2 cup cooked pasta shells, drained

Directions

Spray a large saucepan with cooking spray.

Over medium heat, cook celery, onion, garlic, parsley, Italian seasoning, red pepper and salt in the saucepan until onion is translucent.

Stir in chicken broth and tomatoes. Simmer on low for 15 to 20 minutes.

Add macaroni and undrained beans.

Heat through.

Serve with grated parmesan cheese sprinkled over top if desired.

This makes four servings of approximately 1 1/2 cup each.
