Introduction

Like crab cakes -- but with salmon! Like crab cakes -- but with salmon!
Number of Servings: 4

Ingredients

    1 can salmon, drained
    1 bunch scallions, minced
    1 Tbsp fresh herbs, minced (parsley, dill, cilantro, or basil)
    1 1/2 tsp Old Bay
    1/4 cup breadcrumbs
    1 Tbsp mayonnaise
    1 egg
    salt & pepper
    flour
    vegetable oil

Directions

Makes 4 patties.

Mix salmon, scallions, herbs, Old Bay, breadcrumbs, and mayonnaise in a medium bowl. Salt & pepper to taste (though Old Bay is really salty, so I don't add salt). Carefully fold in the egg with a spatula until the mixture just clings together.

Divide mixture into four patties, cover with plastic and chill in the fridge for 1/2 hour.

Dredge patties in flour.

Heat a bit of oil -- a tablespoon max -- in a skillet over medium-high heat. Fry patties until the outsides are crisp and browned, 4 to 5 minutes per side.

    You could make this more healthy without loss of taste by using unsalted canned salmon, use ground red pepper instead of old bay, use 2 egg whites instead of an egg and skip the mayo or use low fat, use whole wheat bread crumbs and use cooking spray instead of oil. - 7/20/09

    I broil them in my toaster oven. Works as well as i spray with butter or olive oil spray. Saves on calories and I don't usually dredge in flour but keep plain. - 7/22/09

    SOMEONE WROTE THAT THERE WERE TOO MANY BONES IN THE CANNED SALMON.

    THAT USED TO BOTHER ME TOO B/C MY MOTHER DIDN'T DEAL WITH THEM..

    BUT I LEARNED TO FIND ALL OF THE BONES AND SMASH THEM WITH MY FORK. THEN I MIX THEM IN WITH THE SALMON B/C IT REALLY ADDS CALCIUM AND PROBABLY FISH OILS.

    I make salmon cakes using
    8 oz ricotta cheese[low fat,
    2 cups parmesan cheese [this replaces the bread crumbs or crackers],save 1 cup for outside breading,
    1 cup to add to ricotta, 1 egg[beaten]
    1 can salmon
    1 small onion [chopped]
    combine
    then bread outside parmasan cheese
    bake or fry

    In response to LAUREN145: Old Bay is a spice that is full of flavor. Gives your food a nice kick. It's a tad spicy and very strong. You might want to use a little at first because it may overpower your food. I'm from Maryland and we use it on all our seafood recipes especially blue crabs..YUM - 8/7/09

    I love salmon fresh or canned,sounds delish.Here in the islands we omit egg,mayo,dill,no old bay here,but put in fresh thyme,chives,marjoram,rosemary,onion,garli
    c,hot pepper all chopped finely,bit of lime juice,moisten with dash of milk or water,then fried.

    I make my salmon patties with canned salmon, add 1 egg, 1/4 finely chopped onion, and I use whole grain crackers as the filler for more fiber. Cook in a tiny bit of olive oil, lower in calories and my family loves them. - 10/8/09

    I absolutely loved this recipe!!!! I am NOT a fish eater and once I got over the smell of the salmon (to me it smelled like cat food! ha!) I put it all together and boy was it YUMMY!!     I made these using fresh salmon steamed till flaky then cooled. I also used roasted garlic and peppers in the place of the old bay because I didn't have any. I also topped it with Cholula hot sauce when I was done cooking, and garnished them with avocado. They were simply stupendous!! Great recipe. - 12/29/10

    My mother used to make these with canned salmon with bones. Don't worry about the bones, they're soft. You won't notice them. They weren't that soft and I did notice. Took me years to eat fresh salmon again and I won't touch canned. - 6/26/19

    Whoa...these little guys were terrific!!! I wouldn't change a thing! My hubby and I really enjoyed these for dinner tonight!     Love salmon patties! Serve with salad, rice, veggie, lemon wedge &/or tartar sauce. No Old Bay (too much sodium), used minced onions, parsley, and dill, garlic powder and lemon pepper, no mayo and no dredging in flour. A little healthier for us.
