    5 medium vine ripe tomatoes
    fresh mozzarella (the soft kind which is usually packaged in water)
    6 cloves garlic (roasted)
    1 slice of medium red onion
    10 black olives
    2 tbsp olive oil
    2 tbsp basalmic vinegrette
    fresh basil leaves - to taste


cut tomatoes into bite sized pieces and remove seeds
cut fresh mozzarella into bite sized cubes
slice each roasted garlic clove into 2 - 3 pieces
chop onion slice into one inch pieces
halve olives and remove the pit (the wrinkly kind taste best in this salad)
chop basil leaves

Combine all ingredients in a glass bowl and toss with olive oil and the best basalmic vinegrette you can afford - you get better flavor for more $.

Makes 6 1-cup servings.
