Introduction

Fabulous,Tasty and Good for you Chicken and Rice dish Fabulous,Tasty and Good for you Chicken and Rice dish
Number of Servings: 4

Ingredients

    8 oz. Boneless skinless chicken breast
    2 Cups Long grain brown rice
    21/2 cups Chicken Broth
    1 tbsp. Olive Oil
    1/2 teaspoon ground ginger
    1 teaspoon garlic powder
    1 tbsp. Soy sauce
    1/2 cup sliced waterchestnuts
    1/4 cup slivered almonds
    1/4 pkg. frozen mixed veggies (of your choice)

Directions

Start by cutting chicken into bite size peices,Brown chicken in the olive oil until all pink is gone.
Next,Add all other ingredients(except almonds and frozen veggies) to a nice size pot ,add browned chicken and let simmer about 25 minutes and add frozen veggies continue simmering for another 10-12 minutes or until veggies are to your liking,Add almonds and stir.

Simple!

Feeds 4 with about 3/4 cup servings

  • I'm going to try it -- for lower sodium use low sodium soy sauce and one trick I do is rinse the food (canned too) and it helps reduce the sodium. Learned that from a friend following Pritikin :) - 1/23/10
