Introduction

A great little snack for the end of a meal. Easy to make! A great little snack for the end of a meal. Easy to make!

Ingredients

    12 vanilla wafers
    3 oz. cream cheese, room temperature
    12 oz. fat free cream cheese, room temperature
    1/2 c. sugar
    1/2 t. vanilla
    2 eggs

Directions

Preheat oven at 350 degrees. Mix cream cheese, sugar, and vanilla until well blended. Add eggs and blend until smooth. Line a muffin tin with the paper liners. Place one vanilla wafer into each liner. Divide the cream cheese mixture evenly among the twelve cups, pouring over the vanilla wafer. Bake for 20 minutes or until the centers are set. Cool. Refrigerate for 2 hours or overnight. Great alone or with some strawberry/cherry topping.

    probably not, but I have found that that little bit of real cream cheese does affect the flavor, gives it a hint of richness that I like. If you don't mind the flavor when using all fat free, go for it! :)
