Ingredients

    2 Tablespoons olive oil
    16 oz / 500 g skinless chicken thigh fillets, chopped
    3 cloves fresh garlic, crushed or finely chopped
    1 small (7 oz) leek, thinly sliced or medium onion thinly sliced
    1 medium (4 oz) carrot, thinly cut into matchsticks
    8 oz broccoli, chopped into florets
    1 teaspoon cornstarch,
    1 cup chicken stock or use 1 stock cube dissolved in 1 cup of hot water,
    3 Tablespoons oyster sauce
    1/2 cup (3 oz) unsalted roasted cashews (optional)

Directions

Remove all fat from the thighs & cut them into 1/2
