Ingredients

2 cooked boneless, skinless chicken breasts(330 grams)
1/2 cup dried apricots
1/4 cup hot water
2 teaspoons dried cilantro(optional)
1 Tablespoon cornstarch
1/2 teaspoon salt
1/8 teaspoon pepper
1 Tablespoon oil
1 medium onion sliced and quartered
2-3 stalks celery, sliced thin
2-3 medium carrots cut thinly on the diagonal
2 cups snap peas or snow peas
1/2 teaspoon ground ginger
1 clove garlic
1-2 tablespoons lemon juice
cooked rice
Directions
Pre cook 2 boneless, skinless chicken breasts in a sauce pan covered with water. Let cool. Chop into small bits and toss with cornstarch, salt, pepper and cilantro. Set aside.
Chop dried apricots and place in a small bowl. Cover with hot water and let sit for 15-20 minutes.
Heat oil in a non-stick skillet. Add chicken and stir frequently til starting to brown. Add onions, carrots and celery, toss and cook for several more minutes. Add ginger, garlic, peas and apricots with remaining liquid. Stir frequently til peas are cooked but still a bit crispy. Add lemon juice. Serve over rice. Serves 3
