Ingredients

    1 lb Chicken Breast, or Chicken Tenderloins (4 oz per serving)
    Pepper
    Salt

    1/2 cup Kraft Fat Free Italian Salad Dressing
    1/4 cup Lemon Juice
    1/2 tsp Tabasco Sauce

    4 cloves Garlic minced
    2 cups fresh Mushrooms pieces or slices
    1 large raw Onion sliced
    5 cups Zucchini sliced

    8 tbsp Parmesan Cheese shredded

Directions

Spray bottom of pan with non-stick spray, add zucchini, onion, mushrooms, garlic (that have been tossed together). Lay the chicken on top of vegtables, season to taste. Combine dressing, lemon juice & tabsasco (stir well) pour over chicken. Bake at 375* until chicken is done 30-45 minutes depending on the chicken (full breasts vs tenderloins / frozen vs fresh). Sprinkle with parmesan cheese

I have cooked this recipe with frozen chicken it just takes a few minutes longer.

    Incredible! I added squash w/the zuc. Third time in a week that I've made this - it is so good! Next time I'm thinking about adding some cherry tomatoes to it. Starting new diet and this is great for that - don't need to add rice or anything! Love all the veggies! - 4/2/19
