Introduction

Ingredients

18 Chocolate wafer cookies
2 Tbsp. Instant coffee granules
1/4 cup hot water
1 1/2 cups 2% milk
1 pkg Fat free Vanilla pudding
1/4 tsp. gorund cinnamin
2 packages of whipped dessert topping, prepared with skim milk, divided
Directions
1. Place 1 cookie on bottom of a paper lined muffin cup.
2. Stir coffee granules into hot water in a large bowl until dissolved.
3. Add 2% milk, dry pudding mix, and cinnamin. Beat with a wire whisk until well blended. Let stand 5 minutes.
4. Gently stir in 3 1/2 cups of prepared dessert topping. Spoon mixture evenly over cookies in muffin cups.
5. Freeze for 6 hours or until firm. Remove from paper cups just before serving. Top with remaining dessert topping.
Makes 18 single servings. May be placed in an airtight container and frozen up to 1 month.
