Ingredients

    1-1/2 cups whole wheat flour
    1 cup oat bran
    1/2 cup ground flax seed
    2/3 cup brown sugar
    2 tsp. cinnamon
    2 tsp. baking soda
    2 tsp. baking powder
    1 tsp. salt
    2 eggs, slightly beaten
    3-2/3 cup mashed bananas
    2 T. oil
    2 tsp. vanilla
    2/3 cup walnuts, lightly toasted

Directions

Preheat oven to 375. Spray 24 muffin cups with non-stick spray. In a large bowl, combine dry ingredients. In another bowl, whisk together wet ingredients. Stir wet into dry just until combined. Stir in nuts. Divide into pans. Bake for about 20 minutes or until done. Makes 24 muffins.

    Very Good
    More like a bread than a muffin-Mine weren't moist either, but for sheer health value and getting the protein in, they are ace. I reckon it also only makes around 18-otherwise they were really small and flat. - 9/28/09

    The flavors were delicious, but I do not know why mine didn't come out too moist. I even added apple sauce. What would you recommend I do in the future? - 5/31/09

    Spoon the flour into your cup to make sure you're not getting too much. You could also add more banana.
