Ingredients

    1 medium Salmon fillet
    1 clove fresh Garlic, peeled and cut into thin pieces
    1/4 cup Honey
    5 sprigs fresh Dill
    1/2 teaspoon ground Thyme
    1 Bay leaf (broken in thirds)
    1/4 teaspoon Old Bay seasoning (or to taste)
    1 tablespoon Smart Balance spread, divided (Optional)
    Juice from 1/2 fresh squeeze Orange

Directions

Rinse fresh Salmon. If you prefer, you may soak the fish in 1 cup of raw apple cidar vinegar for 5 minutes before preparing. Be sure to rinse.

Place Salmon skin side down in a glass baking dish. Pierce flesh with fork in several places to allow the seasonings to penetrate. Press garlic in the piercings all over the fish. Sprinkle Old Bay seasoning and thyme. Place divided Smart Balance and Dill and squeeze juice of 1/2 fresh orange over entire fillet. Pour honey over fillet and bake on 350 approximately 10-15 minutes, depending on the thickness of the fillet. Let cool and divide into 4 pieces. Remove dill and serve.
