Ingredients

    8 oz. salmon filet
    salt & pepper
    cooking spray
    5 oz. fresh spinach or baby spinach
    3/4 cup fat free half & half
    1/2 tsp. freshly grated nutmeg
    4 oz. (1.5 cups) Dreamfields low carb penne rigate cooked al dente minus 2 minutes
    2 tbsp freshly chopped flat parsley
    1 tsp grated lemon rind
    1 oz. walnuts, finely chopped (optional)



Directions

Heat a large non-stick saute pan over medium-high heat,. Spray with cooking spray. Sear the salmon until it develops a golden crust, about 3 minutes per side. Then remove to a cutting board. In the same pan, cook the spinach until it reduces to one fourth its size (about two minutes), then add the parsley & lemon zest and cook for an additional minute. Add the cream, grated nutmeg and pasta. Simmer 5 minutes. Flake the salmon into chunks and add it to the pan, topping with the chopped walnuts. Toss & serve.
