The main recipe is for the marinade. I am still trying to figure out how to enter these recipes as I cook them, so bear with me! The calorie count is going to show up higher because it is assuming that all of the marinade is being consumed, but it's not! There is at least half of the marinade left over. Ingredients

    Marinade:
    1 orange, zested then juiced
    1 lemon, zested then juiced
    4 garlic cloves, minced
    2 TBS. fresh tarragon leaves, chopped
    1/4 C soy sauce
    1/4 C canola oil
    1/2 tsp salt
    1/2 tsp Black pepper

    1-1.5 LBS boneless, skinless chicken breast, chopped into 1 inch pieces

    2 C fresh pineapple, cubed into big pieces

    1 red onion, choped into big pieces

    Metal skewers

Directions

Combine all of the ingredients for the mrinade into a glass baking dish. Add the chopped chicken. Cover and marinate int e fridge for 2-4 hours.

When you are ready to grill, assemble the kabobs in any order you like..chicken, red onion and pineapple. This recipe should make 4-6 kabobs, depending on how much you stuff them!

Grill until the chicken is cooked through. Approx. 5-7 minutes.

I serve this with brown rice and steamed broccoli..
It reminds me of the Outback chicken griller.
