Sweet and tasty! Sweet and tasty!

    2 sweet potatoes, peeled, cooked
    1/4 tsp cinnamon sugar
    1/4 tsp brown sugar
    1/2 tbsp maple syrup
    1 tbsp butter
    3/4 boiling water


Peel and cube sweet potatoes. Boil cubed potatoes until soft and ready to be mashed. Before draining the potatoes save 3/4 cup of the water to add while mashing. Mash with a hand masher and add water as needed so a somewhat thick consistancy is reached (they should not be soupy). Add butter and other ingredients after mashing. Serve.

Yeilds about 4-5 servings (3/4 cup)

    I cut the recipe in half, using only one potato for two servings. After baking the potato for an hour at 375F, I peeled off the skin, eliminated the maple syrup and sugar, and reduced the water to a tablespoon before mashing the mix and reheating it briefly in the microwave.     Tasted great and was easy to prepare. We enjoyed this for Thanksgiving and substituted Splenda brown sugar,and Maple Grove Sugar Free maple flavored syrup, taste was still excellent. - 11/24/16

    I already have sweet potatoes purchased, now I just need to get some maple syrup! Going to make this for Thanksgiving! Hoping the family will love it! :)

    Update (11/26/12): They were absolutely amazing! I'll forget adding the extra water next time though, but they were delicious!
