So easy and delicious. I just boiled, peeled, mashed the sweet potatoes & added the rest of the ingredients, using splenda brown and sugar free syrup. Reheated in casserole dish and served!
Tasted great and was easy to prepare. We enjoyed this for Thanksgiving and substituted Splenda brown sugar,and Maple Grove Sugar Free maple flavored syrup, taste was still excellent.
I cut the recipe in half, using only one potato for two servings. After baking the potato for an hour at 375F, I peeled off the skin, eliminated the maple syrup and sugar, and reduced the water to a tablespoon before mashing the mix and reheating it briefly in the microwave. Delicious! I love the idea of using the cooking water. I did not find the brown sugar necessary and I added some nutmeg as well because I just really like it. I serve this often with fish now. Thanks!
