Ingredients

Sauce:
6 Tablespoons oil (olive oil or cooking oil)
1 tsp. Garlic
2 Tablespoons parsley
2 – 32 oz. canned diced tomatoes
1 – 15 oz. Tomato sauce (I use basil/garlic)
1 ½ tsp. Salt
½ tsp Italian Seasonings
1 tsp. Sugar (I used Splenda)
1 pkg. Manicotti noodles (to be stuffed – uncooked)
Filling:
1- 15 oz. Ricotta cheese
2-3 cups Mozzarella cheese (grated) (I used part-skim)
½ Tablespoon Parsley
3 Tablespoons Parmesan Cheese
2 tsp. Sugar (I used splenda)
1 - lightly beaten egg
Salt and pepper to taste.
Directions
Sauce:
Heat oil, garlic, and parsley. Add tomatoes and tomato sauce, salt, sugar and Italian Seasonings. Simmer until thickened. Uncovered.
FIlling:
Mix all together. Stuff noodles. Put in pan, cover with sauce, cover pan with foil. Bake 40 minutes at 400 F. Sprinkle with Parmesan cheese.
