Ingredients


    Homemade Low Sodium Chicken Broth, 1 cup
    Curry powder, 1 tsp or to taste
    Yellow Raisins, 1 miniature box (.5 oz)
    Olive Oil, 2 tsp
    Couscous, 1 cup, dry, yields
    Carrots, raw, 1 large
    Oranges, 2 fruit (2-5/8" dia)
    Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
    Lemon juice, 1 fl oz
    Almonds, .25 cup, slivered


Directions

Bring homemade chicken or veggie broth to a boil. Add Curry Powder [1 tsp or to taste]
Add miniature box of yellow raisins.
Add 2 tsp of Olive or Canola Oil
Add 1 cup dry Couscous. Cover & remove from heat for at least 5 minutes.

Peal & grate one carrot. Peal & slice 2 small oranges. Dice on Yellow Bell Pepper. Stir in 1 to 2 Tablespoons of Lemon Juice [may substitute Lime].
Stir in slivered almonds.
Stir in the prepared couscous mixture..
May serve hot or chilled.

    Incredible!
    I roasted asparagus with peppers, then added to couscous. It was A hit. Enjoyed the curry because it was only A small amount.
