    1/2 cup LIGHT coconut milk
    2 tsp curry powder
    3 oz cooked chicken breast, cubed
    2 cups frozen stir fry vegetables
    3 oz plain low-fat yogurt
    2 scallions, chopped
    1/2 cup precooked brown rice


Saute coconut milk, curry powder, chicken and veggies for 10 minutes. Top with yogurt and scallions. Serve with warm rice.
