Ingredients

    16 oz turkey sausage, browned and drained
    2 cups shredded cheddar (or a blend of cheddar, colby and monterey jack)
    2 cups skim or 1% milk
    4 eggs, beaten
    1/2 tsp salt
    1/2 tsp black pepper
    1 cup Pamela's Wheat-Free Baking Mix
    1 fresh jalapeno pepper, finely diced

Directions

Preheat oven to 400 degrees
Lightly oil a 9 x 13 dish
Spread browned sausage in bottom of dish
Spread cheese over sausage
Spread minced jalapeno over cheese
Mix milk, eggs, salt, pepper and baking mix in separate bowl until smooth
Pour over cheese and sausage
Bake for 30-35 minutes, until puffy and golden brown
