Ingredients

6 oz plain flour
1/4 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1 tsp ground ginger
100g/4oz crystallized ginger, chopped
100g/4oz butter
150g/5 oz sugar
2 eggs, beaten
250ml / 8 fl oz sieved apple puree (applesauce)
Directions
Line & grease a 7 inch square tin. Set the oven at 350 degrees F.
Sift the flour, salt, baking soda, baking powder, and ground ginger into a bowl. Stir in the crystallized ginger and mix well. Set aside.
Place the butter in a mixing bowl and beat until very soft. Add the sugar and cream together until light & fluffy. Add the beaten eggs gradually, beating well after each addition. If the mixture shows signs of curdling, add a little of the flour mixture. Stir in the applesauce. Fold in the dry ingredients lightly but thoroughly. Spoon into the prepared tin, smooth the surface and make a slight hollow in the center.
Bake for 30 minutes, then reduce the oven temperature to 325 F and bake for 15 minutes more until firm to the touch. Cool on a wire rack.
Makes one 7inch cake or 14 pieces (1 inch by 3.5 inch)
