Ingredients

1 egg
2 egg whites
1/4 cup reduced fat Colby or Jack cheese
1 Tbsp. Smart Balance Buttery Spread
1/4 cup chopped onion
1/4 cup chopped green pepper
2 Tbs. Non-fat Sour Cream
Salt and Pepper (to taste)
Directions
Makes one omelet.
Heat medium non-stick skillet on stove top on medium-high. When ready, turn down slightly and melt 1/2 tbs. smart balance in bottom of pan.
Cook peppers and onions for a few minutes until softened then remove and set aside.
Whisk egg and egg whites in small bowl with 1 tbs. non-fat sour cream, salt and pepper.
Melt remaining 1/2 tbs. smart balance in pan and pour egg mixture in skillet, evenly coating the bottom. Flip as soon as can be flipped in one piece. Layer meat, cheese, peppers and onion on one half and as soon as possible, fold egg over onto ingredients.
Cook on low until cheese is melted. Serve with remaining sour cream on top.
