Ingredients

1 tsp olive oil
1/3 cup finely minced onion
2 garlic cloves, minced
1 jalapeno seeded
2 Tbsp minced red bell pepper
1/4 cup minced fresh cilantro
1 tsp ground cumin
1/2 tsp hot pepper sauce
1 small sweet potato, peeled and coarsely shredded
1/4 cup egg substitute
1/4 cup seasoned bread crumbs
Cilantro Yogurt
1 cup nonfat yogurt
1/4 minced fresh cilantro
2 Tbsp fresh lime juice
1 tsp ground cumin
Directions
1. Preheat the broiler
2. Set a medium nonstick skillet over medium heat. Add the oiol, onion, and garlic. Saute, stirring occasionally, until the onion is limp, about 5 minutes. Add the chile and bell pepper; cook for another 2 to 3 minutes, stirring often.
3. While the vegetables are cooking, combine the Cilantro Yogurt ingredients in a small bowl.
4. Put the onion mixture in a large bowl. Add the black beans and mash with a fork or potato masher, leaving about one-fourth of the beans whole. Season with salt and pepper. Stir in the cilantro, cumin, hot pepper sauce, sweet potato, and egg substitute. Form into 4 patties. Place bread crumbs on a plate. Lightly press patties one at a time into crumbs, coating both sides.
5. Broil for 5 to 6 minutes, until browned and slightly crisp. Carefully turn and continue to broil for another 3 to 4 minutes. Serve with Cilantro Yogurt.
