Ingredients

    1 1/2 c. zucchini, grated
    1 tomato, chopped
    1/2 c. onion, diced
    2 eggs, beaten
    3/4 c. bisquick
    1/2 c. corn kernals, fresh or frozen
    3/4 c. shredded cheddar

Directions

Preheat oven to 350 degrees. Lightly butter 9" pie plate. In bowl, mix zucchini, bisquick, tomato, corn, onion, cheese and eggs. Pour in pie plate. Bake 45 min. Do not cover while baking.

Serves 6.

    Incredible!
    This was awesome! I had to sub canned tomatoes with chili's, but that just gave it a bit of kick. Will definitely make this again. - 6/22/09
