Introduction
This is a quick and easy recipe I created to have one of my favorite Mexican sides. This is a quick and easy recipe I created to have one of my favorite Mexican sides.Number of Servings: 6
Ingredients

1 can of pinto beans
1 can of Rotel
1 raw slice of bacon (cut into pieces)
1 jalapeno pepper; remove seeds (chopped)
1/2c. onion (chopped)
1/4 c. of cilantro (chopped)
Dash of light beer (preferably corona light)
salt, pepper, garlic powder, cumin, and cayenne to taste
Directions
Mix all ingredients into a pot. Heat until it comes to a boil. Lower heat and let simmer for 10 minutes or so, stirring occasionally.
I believe it makes about 6 servings at 1/2 cup....but it could be more servings.
