Ingredients

    7 Chicken Thighs: skin removed (bone optional)
    1 tbsp Yellow Mustard
    3 tbsp Smart Balance Light Buttery Spread (Made with flax oil)
    1/3 cup honey
    1 tsp curry powder

Directions

Pre-heat oven to 400 F. Rinse and remove excess fat from chicken. Place in non-stick baking dish. Melt the spread and add in the honey, curry powder, and mustard. Pour over chicken. The pan should be shallow enough that the sauce layers the bottom of the pan.

    I made a few adjustments - garam masala and cayenne instead of curry, and dijon instead of yellow mustard - and baked covered for 45 minutes. Perfect! It was tender and flavorful and the whole family loved it. - 7/1/09

    I think you need to edit this for the time. I made it with six pieces in one dish at 400 degrees for an hour. Just fine. - 5/5/11

    Very Good
    My teenage son made this for dinner last night. We added a half teaspoon of cayenne for some more heat and cooked it for 45 minutes. It was super easy and tasted great. - 6/21/14

    I made this but I changed the curry to Adobo which is a Spanish seasoning. I enjoyed it! Thank you! I also would edit it for time but I used the recommended hour that another member said. - 5/28/12
