Ingredients

one roasting chicken (3-5 lbs)
one 12 oz can of any beer
salt and pepper to taste
Directions
Wash chicken, leave whole; Start 3 burner barbeque warming up to 300-350 degrees.
Open beer. Turn middle burner off, leaving other two burners on high heat. (if using charcoal, push coals out so they are surrounding area but not directly under the chicken) Stand open beer in middle of burner. Take chicken and stand over beer on its bottom, beer can will fit in cavity of chicken. Chicken will stand on its own for cooking time. Put hood down and let her cook for one hour.
After one hour of cooking, use meat thermometer to check for doneness. The beer can should be empty.
I use this chicken all week in other recipes. The skin pulls off easily and meat falls off the bone. My husband usually hates white meat chicken, but really loves this recipe. It's always moist and flavorfull.
