Introduction

This is a recipe used by our local fire department when catering. Some have made it with fruit cocktail instead of the oranges. This is a recipe used by our local fire department when catering. Some have made it with fruit cocktail instead of the oranges.
Number of Servings: 15

Ingredients

    2 cups Flour
    2 cups white sugar
    2 tsp baking soda
    1 tsp salt
    2 eggs
    2 cans mandarin oranges (approx 2 cups)
    Topping:
    2 Tblsp butter
    3/4 cup brown sugar
    2 Tblsp milk

Directions

Mix first 6 ingredients (may have some lumps). Put into 9 " x 13" glass pan and bake at 350 for 25 min. Mix topping and spread over cooked cake and return to oven until bubbly. Do not grease pan. Makes 15 servings (about 2" x 3") Can top with whipped topping if desired.
