Ingredients

    3 Chicken Breast, no skin, 18.4 ounces
    4 Tbs. Flour, white
    2 Tbsp. Smart Balance Light Buttery Spread with Flax Oil
    1/4 Cup Beef broth, bouillon, consomme
    2 Tbsp Sherry, dry
    Lemon Juice, 3 wedge yields

Directions

Butterfly chicken breast and pound thin. Dredge in flour, salt and pepper. Fry over medium high heat in margarine. Till lightly brown on both sides. Remove meat to warm oven and deglaze pan with beef broth and sherry, scraping up all the brown bits left in the pan. Pour the liquid over meat, squeeze lemon wedges over chicken and serve.
