Ingredients

bottled Indian spinach sauce (I use trader joe's)
1 cup uncooked lentils
light balsamic dressing
1 bag fresh spinach
1 block firm tofu
salt and pepper to taste.
Directions
rinse lentils in water
place 1 cup lentils in large pot with 2 and 1/2 cups water and cook until they come to a boil. Reduce heat, cover and simmer for about 20 minutes until lentils are soft.

continue to cook on low heat for 5-10 minutes longer ...then serve.
