Ingredients

    1 med Head Cabbage
Ground Beef (X lean about 2 cups cooked)
1 pack medium firm tofu drained
Dainty Canned rice (1 Can, bit of spice equals about 2.5 cups cooked rice, I just like this one)
Hines Tomato Juice (Most of 1 lrg can)
Salt pepper and 1/2 the chicken spice pouch that comes with the rice (or oxo type powder chichen broth, about 1 tbs, to rice 1 tbs to sauce to taste).

Directions

Marinate tofu overnight in some of the tomato juice. Micro Cabbage wrapped tightly in saran for about 5 mins till soft.Fry beef and tofu, add rice, 1/4 chicken spice package and 3/4 cup juice, cover, simmer 5 mins. Cool cabbage and rice mix.Put about 1 inch layer of juice in pan, wrap meat mix in cabbage leaves till you run out of cabbage, cover cabbage with juice, tuck remainder of rice mix around the cabbage rolls, top with a little more juice. Bake at 350 about 30 mins, till hot. ALSO, add salt and pepper to each juice layer, and add chicken spice on top and press in. Enjoy! You can make this, don't bake it, and freeze it to bake later, bake right from freezer.

    Incredible!
Ah! that hit the spot. I was looking for something new or different and bingo! Thanks. I changed things up a bit, used riceoroni style beef rice and used bell peppers for half the recipe. That way I can have a change of pace during the week. Made Zuccini Gratin as the side. - 3/28/09
