Ingredients

Mascarpone Cheese, 2 tbsp
Peaches, fresh, 1 medium (2-1/2" dia)
Graham Crackers, plain, honey, or cinnamon, 1 cracker (2-1/2" square)
Granulated Sugar, .10 tsp
Directions
cut peach in half and remove the pit
place peach halfs face down on the grill (or grill pan) and heat until peaches are soft. (mine took about 10 minutes)
allow peaches to cool to the touch, add a dollip of mascarpone cheese (about 1 tbsp) to teh center of each peach halve.
crumble one square of graham cracker (or any type of cookie) over the top of the mascarpone cheese dollips and peaches
sprinkle with a little bit of granulated sugar for a bit of added sweetness and serve
1 serving= 2 peach halves. I served mine with a mint leaf to make it pretty. I'll try to upload a picture later on.
