Ingredients

1 box of Hodgson Mill Whole Wheat Wild Blueberry Muffin Mix (about 2 cups)
1 tbsp canola oil
1 cup and 2 tbsp nonfat milk
1/4 cup liquid egg whites
2 tbsp wheat germ
2 tbsp Sprinkle Fiber (Fiber35 Diet)
1 tbsp wheat germ (reserved to sprinkle top of muffins)
1 tbsp sucanat (reserved to sprinkle top of muffins)
Directions
1. Mix all ingredients together up to the Sprinkle Fiber.
2. Let rest for 10 minutes.
3. While muffin mix is resting, pre-heat oven to 400 degrees Fahrenheit and grease 8 cups of a muffin pan with cooking spray.
4. Evenly distribute muffin mix into the 8 muffin cups.
5. Bake for 16-18 minutes.
