Introduction

Ingredients

    - Brown rice (.75 cup per serving)
    - Eggs (1 per serving) *optional - can be substituted with soy chicken/beef products
    - Onion (1/2 cup, chopped)
    - Red/Green pepper (1/2 cup each)
    - Zucchini (1/2 cup)
    - Garlic (1 tsp.)
    - Ginger (1 tsp.)
    - Cilantro (to taste)
    - Any other vegetables or beans
    - Thai chili sauce/hot sauce/soya sauce *optional

Directions

Prepare rice as usual according to directions. While it's cooking, chop/grate the veggies and spices and scramble the egg. When egg(s) almost scrambled, add veggies and spices to the frying pan (using olive oil if desired) and "fry" until they reach a desired texture.
Mix together all ingredients once cooked and add the sauce of your choice, or a spice blend instead. So easy.
