Ingredients

1/2 onion, diced fine
2 cloves garlic, diced fine
1/2 habanero pepper, seeds removed, diced ultrafine
1 jar Alessi strained tomatoes (can substitute large can of tomato sauce)
1 small can diced tomatoes, no salt added
1 Tablespoon tomato paste
5 hot turkey sausages
1 box Barilla plus penne
2 teaspoons extra virgin olive oil
Directions
Bring large pot of water to a rapid boil, add pasta.
Simmer sausages in skillet until done, remove and then sautee in one teaspoon olive oil until casings are crisp. Remove from heat, slice thin.
While water is boiling and sausages are simmering, heat one teaspoon of olive oil in a large saucepot. Sweat the onions, garlic, and habanero pepper together until onions begin to become translucent (approx. 4-5 minutes). Add heaping tablespoon of tomato paste, and stir to incorporate. Add diced tomatoes, strained tomatoes, and ricotta cheese. Stir until well combined.
Drain pasta, DO NOT RINSE. Add immediately to sauce, and stir. The remaining starch on the pasta will help to slightly thicken the sauce. Add sausage, stir to blend.
