Introduction

This quick and easy salsa is a great topper for chickenk,pork,beef and fish. It is also wonderful by it self on a corn tortilla or with corn tortilla chips. Ingredients

    1 cup green bell pepper chopped
    1/2 cup white onion chopped
    1 cup chopped tomatoes
    1/2 tsp minced garlic
    2 tbsp olive oil
    Salt to taste

Directions

Heat skillet(medium heat) add olive oil. Once oil is hot add chopped green bell pepper, chopped onions, minced garlic and salt. Allow to saute about 3 minutes, (or until bell pepper is soft ), make sure all veggies mixed well with olive oil and make sure to stir frequently. Last add chopped tomato to skillet. Once tomatoes have reduced in size (approx 2-3 more minutes) remove skillet from heat. Use immediately on top of main dish or as a main dish.
