    1 chicken breast, poached
    1 small tomato, diced
    1/2 cup cucumber, diced
    1/4 cup part-skim ricotta
    1 tbsp parmesan
    1 tbsp fresh chives, chopped
    1 tbsp fresh basil, chopped
    1/2 tsp fresh thyme

Directions
