Introduction

If you're Canadian you've probably enjoyed a Tim Horton's Ice Cappucino (a.k.a. "Ice Cap") drink and then felt guilty about all of the carbs and calories after the fact. It took some tinkering, but I've managed to reproduce the taste without the guilt.

This recipe was reproduced in Canada's National Post newspaper some years back.

Number of Servings: 2

Ingredients

    2 cups (16 fluid oz.) coffee frozen into ice cubes
    1 cup skim milk
    2 tbsp Jello Fat Free Pudding powder
    2 packets Sugar Twin sweetener

Directions

Put all ingredients into a blender and spin the holy bejeebers out of them until you get a nice, smooth consistency. The Jello powder needs to be agitated for at least a minute at high speed for it to start to thicken and provide texture. Once you've got your smoothie, pour it into two glasses and serve.

Each 12 oz. serving is approximately 51 calories. The 10 oz. Tim Horton's product that you're replacing has 250, so enjoy.
