Introduction
This is a great way to use up leftover roast beef.Any of the ingredients that your family doesn't like can be left out - well, except for maybe the tomatoes - but certainly, the broccoli, onions, mushrooms, etc... can be omitted.
I love the smoky flavour that Clubhouse Mesquite Rub Marinade provides though; used it on the roast over the grill yesterday and added more to the chili today. This is a great way to use up leftover roast beef.

Ingredients

Clubhouse Rub Marinade, Mesquite, 1 tbsp
Portabella Mushrooms, 300 grams
Mushrooms, fresh, 1 cup, pieces or slices
Tomatoes (Italpasta; no salt added), 5 cup
Beans, red kidney, 1 cup
Onions, raw, 1 cup, chopped
Broccoli, fresh, 1 cup, chopped
Chili powder, 1 tbsp (or to taste)
Water, tap, 1 cup (8 fl oz)
Beef chuck, arm pot roast, 8 oz
Garlic, 2 tsp
Directions
My pot of chili using these ingredients made enough for 10 servings; we'll be freezing half.
Excellent served over rice but since I don't eat it, that is not included in the calorie total.
Nothing fancy in the instructions. Cut up the roast and whatever veggies you're using; open the cans of diced tomatoes (I use Italpasta NO SALT tomatoes - if you use a brand that has salt, you'll want to adjust for that) - throw everything in a pot and simmer - the longer the better.
